These are a traditional Norwegian cookie. I learned about them from Shirley Evenstad of Sons of Norway lodge 1-602 (Norsota). Shirley is also a world class practitioner of rosemåling, a Norwegian decorative painting style. This Butterscotch Sauce recipe is from Michael Ruhlman’s book “Ratio”. His writing on cooking is excellent and thrilling. Highly recommended. Ingredients 4 oz unsalted butter (1 stick) 8 oz dark brown sugar (I use whatever brown sugar is available) 8 oz cream 1 tsp vanilla extract 2 tsp apple cider vinegar 1/2 tsp salt Method It tastes really good before adding the vanilla and vinegar. Originally from Cook’s Illustrated. The best chicken marsala I have ever had. And the first recipe I ever made where I felt it was something I’d easily pay money for in a restaurant. The original recipe calls for pancetta and I substitute bacon because I don’t live in Italy. Traditional Scottish Shortbread

Shortbread is very similar to Ruhlman’s “essence of cookie” that he discusses in his book Ratio. This is much better than Walker’s Shortbread. This recipe can be scaled up or down. Just keep the ratios consistent. NOTE: Caster Sugar can be created by pulsing granulated sugar in a food processor or blender.
