Meatballs

This meatball recipe is simple and straightforward. It is baked so you can start it first and finish dinner while they are baking. Meatballs of course go excellently with Red Sauce .

The beef is for 2 1/2 lbs because I shop at Aldi and that is their package size. For less meat I wouldn’t use less onion or mushrooms.

  1. Sauté the onion and mushroom until the onions are soft and the mushrooms have released their water and most has evaporated
  2. Beat eggs and milk in a stand mixer
  3. Add beef and onion+mushroom mixture
  4. “Season to Taste”
  5. Mix mixture together. Scoop out meatball sized balls, shape with hands, place in glass baking dish.
  6. Bake for 45 minuters at 350F

2 1/2 lbs ground beef fills 2 glass baking dishes, the 9x13 size and the one size below it.

Salt and pepper are good as seasoning. Try starting with 2 tsp salt and 1 tbsp pepper and see how the baked result tastes and adjust. Fresh thyme leaves work well. Fresh parsley or basil minced work well. A couple heads (not cloves) of butter sautéed minced garlic would be good. Experiment.

Different meat mixtures are good too. Mixing beef and pork. Mixing beef and pork sausage or other seasoned pork. Be sure to adjust salt downward if you use seasoned pork.
