Basic vinaigrette is a ratio of 3 parts oil to 1 part vinegar.
For example the simple balsamic vinegar dressing I make is 2 oz vinegar and 6 oz of oil.
You could use olive oil for the whole thing. However not all olive oils taste that great. Experiment.
This is from Disney’s recreation of the Hollywood Brown Derby cobb salad dressing. It is delicious and worth all the ingredients.
Blend together all ingredients except oils. Then add olive and “salad” oils and mix well. Blend well again before mixing with salad (it separates like crazy).
I don’t exactly know what salad oil is. Use something that isn’t olive and which is healthy, affordable and neutral tasting.
