Roasted Marinated Beets

I’ve been making roasted beets to add to salads lately and it had been a while so I’d forgotten how good they are.
This is originally from Thomas Kellar’s “Bouchon Cookbook”.
Take 3-4 beets, trim the greens down to about 1/4" off the top. Trim the trailing root end a bit. Wash them. Don’t peel.
Wrap them in AL foil and add 3 tbsp oil and 3 tbsp water and salt and pepper.

Thanksgiving 2020 - A Report

First, lets start with being thankful for making it this far through 2020.
Second, presenting “Thanksgiving Dinner” as a take-out experience worked very well. We had it at lunch time in the covered patio with a propane heater and everyone was very comfortable.
We started with salad which included dressing on ths side and delivery of the cranberry sauce cup.
Salad Course. Dressing + Cranberry Sauce
After came out the dinner box of turkey, brussels sprouts, slow cooker mashed potatoes and slow cooker lasagna.

Exciting Clients

My clients are generally pretty fun to be around.
One in particular I only see every other week for 1/2 hour. It isn’t a big project by any means and she keeps getting a lot out of it.
Basically I listen to what she is doing lately and give feedback and ideas. She works with successful woman managers and executives. She does one-on-one coaching as well as running a number of groups.

Email Blues

Last week I realized I was having a pretty serious problem with email.
My business emails weren’t getting to GMail users.
For a business, this is a pretty bad problem. Luckily I have been wanting to move away from my Digital Concierge brand and was already planning on using michaelhelmke.com as my mail website and business identity. So all I had to do was create a new email set up for myself under that domain and I was ready to go.

Calibrating Rain

I’ve always been fascinated by the rain.
I attribute this to California not having much rain, in general. Despite growing up in semi-arid conditions with lots of landscape watering, I enjoy seeing green things and water.
Minnesota when it isn’t snowing, has lots of rain. Often when it rains, it’s very hard rain. Rain I hardly ever see in California.
So when visiting California recently, and it was “raining”, I thought about comparing the volume of rain coming down in a way that makes more sense than “number of inches this season”.
