Shortbread is very similar to Ruhlman’s “essence of cookie” that he discusses in his book Ratio.
This is much better than Walker’s Shortbread.
This recipe can be scaled up or down. Just keep the ratios consistent.
NOTE: Caster Sugar can be created by pulsing granulated sugar in a food processor or blender.
2 cups flour
2 sticks unsalted butter
1/2 cup caster sugar
1/2 tsp salt
Butter a square baking pan (8x8 or 9x9)
Sugar, flour, salt, butter in food processor and pluse until combined and looks like coarse breadcrumbs but comes together into dough when pressed.
Pour into greased baking pan. Press down to form flat surface. Prick with fork, creating rows. This is traditional.
Place in middle rack of 350F oven and bake for 30-35 minutes or until light golden and firm.
Cool, cut, serve, eat.
