Cauliflower Casserole

This is a cauliflower bake with cheese and bacon. We have found it has an enjoyable flavor and texture reminicent of scalloped potatoes and mac and cheese.

Ingredients

Cut the cauliflower heads into smaller pieces. Arrange on cookie sheets. Oil, salt, pepper. I get my hands in there to make sure they are covered.

Roast cauliflower at 375F for about 30 minutes. Check 1/2 way through and scrape them around on the pan to avoid scorching.

Make the cheese sauce. Lightly sauteƩ garlic in butter. Add flour and mix around. Cook until the roux starts to brown a little. Ideally there is a nutty aroma.

Whisk in 2 cups milk. Continue cooking constantly until thickened. Add bacon.

Put roasted cauliflower into baking dish. Pour cheese bacon mixture over the top and mix in until everything is well mixed.

Bake at 375F for an additional 15 minutes.
